BEET GREENS



INGREDIENTS

  • 1 pound beet greens
  • 1 strip of thick cut bacon, chopped (or a tablespoon of bacon fat)
  • 1/4 cup chopped onion
  • 1 large garlic clove, minced
  • 3/4 cup of water
  • 1 Tablespoon granulated sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 1/6 cup of cider vinegar


DIRECTION

  • Wash the green with the cold water in the sink.
  • Drain the greens and wash again.
  • Drain the grains again and cut away the heavy stems on it.
  • Cut the leaves in the bit sized pieces and put it aside.
  • Take a large skillet and cook them until they are light brown.
  • Add onions in it and cook on medium heat.
  • Cook until the onions are soft and light brown. 
  • Now add garlic in it.
  • Add water in it so that all the particles stuck on the base are loosen.
  • Add sugar and red pepper in it and bring it to boil.
  • Now add the beet greens and mix well, so that all the beet greens are mixed well.
  • Cover the pot and let it simmer for 10 to 15 minutes or until the greens are tender.
  • Add vinegar in it and serve.
