CURRIED CHICKEN AND GRAPE SALAD RECIPE



INGREDIENTS

  • 1/4 cup light mayonnaise
  • 1/4 cup plain low-fat yogurt
  • 2 teaspoons curry powder
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon salt
  • 3 cups shredded cooked boneless, skinless chicken
  • 1 cup seedless red grapes, halved
  • 8 cups baby spinach
  • 1/4 cup sliced almonds, toasted

 

DIRECTION

  • Mix together salt, lemon zest, mayonnaise, curry powder and yogurt.
  • Take another bowl and add chicken and grapes in it.
  • Add the dressing in it and toss well to coat the chicken and grapes.
  • Place in the refrigerator for 15 minutes.
  • Take a dinner plate and arrange the spinach in it.
  • Put the chicken salad in the center of the plate and sprinkle the almonds on it and serve.
