INGREDIENTS (serves 10)
- 2kg sweet potato (kumara), peeled, coarsely chopped
- 80ml (1/3 cup) fresh orange juice
- 60g butter
- 1/3 cup small sage leaves
- 115g (1 cup) walnuts, lightly toasted
- 1/2 teaspoon ground nutmeg
DIRECTION
- Cook the sweet potato in a large saucepan of boiling water for 20 minutes or until tender.
- Drain and return to the pan.
- Mash until almost smooth.
- Add the orange juice and 40g of the butter.
- Mash until smooth. Season with salt and pepper.
- Heat the remaining butter in the pan over medium heat until foaming.
- Add the sage and cook, stirring, for 23 minutes or until the butter is golden and the sage is crisp. Stir in the walnuts and nutmeg.
- Spoon the sweet potato mash into a large serving bowl and top with the sage and walnut mixture.
