SWEET POTATO MASH WITH BURNT SAGE BUTTER AND WALNUTS




INGREDIENTS (serves 10)

  • 2kg sweet potato (kumara), peeled, coarsely chopped
  • 80ml (1/3 cup) fresh orange juice
  • 60g butter
  • 1/3 cup small sage leaves
  • 115g (1 cup) walnuts, lightly toasted
  • 1/2 teaspoon ground nutmeg



DIRECTION

  • Cook the sweet potato in a large saucepan of boiling water for 20 minutes or until tender.
  • Drain and return to the pan.
  • Mash until almost smooth.
  • Add the orange juice and 40g of the butter. 
  • Mash until smooth. Season with salt and pepper.
  • Heat the remaining butter in the pan over medium heat until foaming.
  • Add the sage and cook, stirring, for 23 minutes or until the butter is golden and the sage is crisp. Stir in the walnuts and nutmeg.
  • Spoon the sweet potato mash into a large serving bowl and top with the sage and walnut mixture.
