TOMATO BASIL SOUP

• 1 kg of tomatoes
• 1 green pepper
• 1 large onion
• 1 bunch of basil
• 1 liter of chicken stock

GINGER BREAD CAKE WITH LEMON GLAZE




INGREDIENTS


  •  1 2/3 cups all-purpose flour
  •  2 teaspoons ground ginger
  •  1 1/4 teaspoons baking soda
  •  1 teaspoon ground cinnamon
  •  3/4 teaspoon salt
  •  1/4 teaspoon Chinese five-spice powder
  •  1/2 cup white sugar
  •  1/2 cup dark molasses
  •  1/2 cup vegetable oil
  •  1 egg, beaten
  •  1/2 cup boiling water
  •  1 cup powdered sugar
  •  1/4 cup lemon juice
  •  1 tablespoon grated lemon zest

  •  1 1/2 cups candied pineapple chunks
  •  3 cups golden raisins
  •  1 1/2 cups candied cherries
  •  1 cup dried currants
  •  2 ounces candied orange peel
  •  2 ounces candied citron peel
  •  1/2 cup orange juice
  •  2 cups butter
  •  4 cups confectioners' sugar
  •  8 eggs, separated

MUTTON CURRY




INGREDIENTS

  • Serves 4
  • 1 teaspoon olive oil
  • 350g well trimmed lean boneless mutton cut into 2cm chunks
  • 1 medium onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon all spices powder
  • 400g cauliflower florets
  • 300 gm chopped tomatoes
  • 125ml water
  • 200g frozen peas
  • 5 tablespoon chopped coriander leaves
  • 115g plain low fat yoghurt
  • 2 tablespoon plain flour


MUTTON WITH ROASTED VEGETABLES AND COUSCOUS




INGREDIENTS

  • 1 sprig fresh rosemary, chopped
  • 6 limes
  • 1 bunch of mint leaves, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 chilli, finely chopped
  • 350g boneless leg of goat or lamb, cubed
  • 1 brinjal, peeled and cubed
  • 1 red capsicum, seeded and chopped
  • 1 yellow capsicum, seeded and chopped
  • 2 spring onions, chopped
  • 1 tablespoon butter
  • 225g couscous
  • 250 ml water
