VEGGIE BIRIYANI RECIPE


INGREDIENTS
  • 250gm  rice
  • 400gm special mixed frozen vegetables
  • a generous handful of raisins
  • 1 vegetable stock cube
  • 2 tablespoon korma curry paste
  • a generous handful of roasted salted cashew nuts


DIRECTION
  • Boil the water is a kettle. Take a large microwaveable bowl and pile in with the rice, vegetables and raisins.
  • Pour 600ml/1 pint boiling water over the rice mixture and crush in the stock cube, then whisk in the curry paste.
  • Cover the bowl with cling film, leaving a small gap at the side to let out the steam.
  • Cook on full power (850 watts) for about 12 minutes - if your microwave is less powerful, add another 2 minutes to it.
  • Remove from the microwave and leave it for 5 minutes keeping it covered and untouched to complete the cooking - if you don't let the rice to stand they will be too nutty.
  • Mix the rice, dish them out and garnish with cashews and serve.
